Red beans and rice is a Monday tradition in South Louisiana. You can find it on special every Monday in restaurants all over. Also, it's traditionally served on Mondays on offshore installations. There is, in fact, a reason for this.
Back in the days before there was a washer and dryer in every "laundry room" of every house, everywhere, laundry was a major undertaking for Mama every week. It simply was not practical to do laundry any old day, especially for larger families. So, Monday became traditional "laundry day". So what's the deal with the red beans?
Red beans and rice is a dish that takes all day to cook (properly). Mama could rinse the beans, prep the veggies and toss it all in a pot in the morning so that she could spend the day getting the laundry done. When dinner time came, and all the laundry was done, all she had to do was make a pot of rice and dinner is served!
So, if you ever find yourself in New Orleans on a Monday, you can bet your last dollar that red beans and rice are on special in virtually any restaurant you enter. It's also on the plates of South Louisianians everywhere on Monday to this day!

Bet you didn’t know there would be a test…..
So, I have completed 4 of 6 chemo infusions, and I have to say that the last one seems to have caused almost no side effects that cannot be otherwise explained by the disease itself. I remain exhausted all the time, and I go home at the end of the workday positively depleted. That, however, seems to be due to the anemia that somewhat existed before chemo started but certainly seems to have been exacerbated by it.
I presently sit at a 40% disability rating with the Veterans Administration with some big stuff pending. I am awaiting a decision on my hearing loss and the PTSD/Depression. The cancer aspect takes a step forward with an exam by a VA contracted provider who will provide a recommendation as to the service connection to the cancer. If it goes my way and I get to 100%, then as soon as the first check hits the bank, I’m retired. While this exam is scheduled for Monday, I have no assurance that a VA determination will be quickly forthcoming. Patience is the key.
